Preparation

Pour 1,500g clean water into the main pot and add the simmering basket containing 500g pork ribs

Blanch the materials at 5min/50℃/REV 5.5, take out the pork ribs and wash them, and clean the main pot

Add 30g fermented soya beans, 30g minced garlic, 1 teaspoon of sugar and 10g light soy sauce to the cleaned pork ribs

Add 10g cooking wine, 1teaspoon of dark soy sauce, 2 big measuring spoons of starch

Sprinkle 10g sesame oil and mix the materials.Wrap the mixture with plastic film and marinate it in a refrigerator for 30min

Pour 600g clean water into the main pot

Boil the materials at 5min/110℃/REV 1

Put into a steamer with the pork ribs and steam them at 20min/110℃/REV 1
