Ingredients

  • Egg

Preparation

  • step 1

    Sieve 70g low gluten flour for later use

  • step 2

    Put 25g milk and 20g corn oil into a bowl, and fully stir them for sufficient emulsion

  • step 3

    Place a dry whisk and put the whites of 5 eggs, 60g white granulated sugar and 10g lemon juice into the clean water-free and oil-free mixing bowl

  • step 4

    Whip the ingredients at 15min/40℃/REV4.5

  • step 5

    Put the sieved low gluten flour, mixed milk and oil, and 1 tablespoon of baking powder into the egg paste

  • step 6

    Mix the ingredients at 8sec/REV3.5

  • step 7

    Scrape the flour to the bottom of the mixing bowl with a scraper, and mix the ingredients at 8sec/REV3

  • step 8

    Pour the batter into a 6” mould, sprinkle 30g dried cranberries into the batter, and clean the mixing bowl

  • step 9

    Pour 1,000g water into the mixing bowl

  • step 10

    Put on the steamer set and steam the cake batter at 40min/110℃/REV1

  • step 11

    Take out the Steamed Cake and immediately put it upside down, and demould and cool it for enjoyment
